A savory sausage and peppers pasta featuring al dente pasta tossed with colorful peppers, spicy Italian sausage, and a flavorful sauce!
If you need a quick, tasty dinner idea, then you've got to try this sausage and peppers pasta.
The noodles are perfectly cooked so that they soak up all those amazing flavors.
For our recipe, we used spicy Italian sausage and a medley of colorful bell peppers.
Then we added onions, garlic, diced tomatoes, and some Italian seasonings.
Best of all, this homemade meal is done in less than 40-minutes! So, shall we get started?
How to make sausage and peppers pasta from scratch?
First, fill a large stock pot with water, salt it generously, and place it over high heat.
Bring the water to a boil and then add the pasta noodles. While the noodles cook, you can make the sauce.
Next, place a large skillet over low-medium heat. Toss in the sausage links and oil.
Cook the Italian sausages until they've browned on all sides. Be sure to turn them every 3-4 minutes.
Now, once the meat is done, remove it from the pan.
Toss in the onions and peppers. Let them cook for about 6-minutes. After that, add the garlic and let it cook for another 60-seconds.
Cut the sausages into 1/2-inch pieces and add them back to the pan. Then, pour in the diced tomatoes and Italian seasonings.
Afterward, stir the mixture and let it simmer for about 10-minutes or until the sausage has fully cooked.
Once the meat is done, go ahead and do a taste test. Add salt and pepper to taste.
Last, drain the noodles and add them to the skillet. Turn off the heat and stir the ingredients to combine everything.
Once the noodles are properly coated with sauce, serve the dish.

Recipe Tips:
- To create a heavier tomato sauce, consider adding extra diced tomatoes. You may need to add extra spices if you choose to add the extra tomatoes.
- You don't have to slice the sausages, they can be served whole. However, the cook time may need to be increased slightly once they're added back to the pan. You don't want to consume raw sausages!
- Parmesan or Pecorino Romano cheese(s) make excellent toppings for this dish.
Ingredients
- 16 Ounces Short Pasta, cooked (penne, ziti, rigatoni, etc)
- 1 Tablespoon Cooking Oil
- 5 Italian Sausages, any variety
- 1 Cup Red Bell Pepper, thinly sliced (about 1 medium pepper)
- 1 Cup Yellow Bell Pepper, thinly sliced (about 1 medium pepper)
- 1 Cup Orange Bell Pepper, thinly sliced (about 1 medium pepper)
- 1 Cup White Onion, thinly sliced (about 1 medium onion)
- 1 Tablespoon Garlic, minced or pressed (about 3 medium cloves)
- 28 Ounces Diced Tomatoes, undrained
- 2 Tablespoons Italian Seasoning
- Salt and Pepper to taste
Instructions
Bring a large pot of salted water to a boil, and cook the pasta noodles while making the sausage and peppers sauce.
Heat a large, 12-inch skillet or larger, over low-medium heat. Add the oil and sausages. Cook the sausages turning every 3-4 minutes until the outsides are browned. Remove from the pan to a waiting plate.
In the same skillet, add the peppers and onion. Cook for 5-6 minutes or until the peppers and onions begin to soften, then add the garlic. Cook for an additional 30 seconds to 1 minute. Cut the sausage into ½ inch pieces and add back to the pan.
Add the diced tomatoes and Italian seasoning. Stir to combine, and simmer over low heat for 8 - 10 minutes until the sausage is cooked through. Taste, and add salt and pepper to taste.
Stir the cooked pasta noodles into the sausage and pepper sauce.
Serve immediately with a side salad and garlic bread or garlic knots. Leftovers can be stored in a sealed container, in your fridge, for up to 3-days.
