Recipe Tips:

  • To create a heavier tomato sauce, consider adding extra diced tomatoes. You may need to add extra spices if you choose to add the extra tomatoes.
  • You don't have to slice the sausages, they can be served whole. However, the cook time may need to be increased slightly once they're added back to the pan. You don't want to consume raw sausages!
  • Parmesan or Pecorino Romano cheese(s) make excellent toppings for this dish.

  • 1 Tablespoon Garlic, minced or pressed (about 3 medium cloves)
  • 28 Ounces Diced Tomatoes, undrained

Instructions

Bring a large pot of salted water to a boil, and cook the pasta noodles while making the sausage and peppers sauce.

Heat a large, 12-inch skillet or larger, over low-medium heat. Add the oil and sausages. Cook the sausages turning every 3-4 minutes until the outsides are browned. Remove from the pan to a waiting plate.

In the same skillet, add the peppers and onion. Cook for 5-6 minutes or until the peppers and onions begin to soften, then add the garlic. Cook for an additional 30 seconds to 1 minute. Cut the sausage into ½ inch pieces and add back to the pan.

Add the diced tomatoes and Italian seasoning. Stir to combine, and simmer over low heat for 8 - 10 minutes until the sausage is cooked through. Taste, and add salt and pepper to taste.

Stir the cooked pasta noodles into the sausage and pepper sauce.

Serve immediately with a side salad and garlic bread or garlic knots. Leftovers can be stored in a sealed container, in your fridge, for up to 3-days.
